Guatitas a la Jardinera

Here’s a unique dish we stumbled on by accident!

After a long day of exploring Santiago, we stopped at Juan y Medio, a local chain that was said to serve excellent homestyle Chilean dishes. Reading through the English menu, we came across a dish that was named “Traditional Veal Stew”. Being the gringo that I am, I assumed this referred to the tender cuts of beef from calves. As our veal stew comes out, our waiter walks ahead and apologizes, explaining that our order wasn’t the beef cutlets we were anticipating, but rather, the guatitas of the calves. What was presented to us was a generous portion of tripe, cooked in peas, carrots, corn, tomatoes, and spices.

Thankfully, tripe was a food that I was okay eating, and the dish was overall quite tasty. I’m actually quite happy that I had the opportunity to try guatitas a la jardinera, as it’s considered a national dish.
