Cincinnati Chili was one of those dishes that always seemed to make sense to me, but I was surprised that it really hasn’t spread very far outside of Ohio and northern Kentucky. It’s a regional dish that consists of spaghetti topped with chili and a generous quantity of shredded cheese and onions. The chili is somewhat unique with a mild sweetness and a hint of spice to it. They say some Cincinnati Chili cooks add a bit of chocolate and cinnamon to it, but the recipes are closely guarded secrets.
