Foul/ful (pronounced FOOL) is one of the oldest dishes, dating back thousands of years to ancient Egypt. It’s a dish consisting of cooked fava beans, olive oil, lemon juice and spices. It’s traditionally prepared in a large pot with a long wooden spoon as shown above, and served alongside more spices, vegetables, kind of like a middle eastern chili.
Foul was offered for all my meals in Jordan; I even had a bowl for breakfast at the airport in Amman before boarding my flight back home. Warm, hearty, and delicious!
