Ajiaco

Ajiaco is one of the most well-known dishes in Bogotá. It’s a soup made from chicken, three kinds of potatoes, and an herb called guasca. As shown in the photo, corn, avocado, and a drizzle of cream commonly accompany ajiaco.

The ajiaco that I had from Restaurante La Herencia was excellent. Though its main ingredient is potatoes, the soup wasn’t too heavy, and had a rich, buttery flavor.

This soup is a must-try if you visit Bogotá.
