I spent a week working out of my former company’s Stockholm office, and while Swedes get a lot of workplace perks that Americans don’t, subsidized lunches aren’t one of them.
This afforded the opportunity for my Swedish coworkers to take me to a nearby cafeteria for lunch, where I learned that they serve a very traditional meal eaten specifically on Thursdays since World War II.
Ärtsoppa is a split pea soup made with yellow peas and bits of pork. It’s best eaten with some fresh whole grain mustard, and I recall adding a dash of cream as well.
Pannkakor are Swedish style pancakes topped with whipped cream and lingonberry jam (or any type of jam).
My coworkers told me that ärtsoppa and pannkakor are still served every Thursday in the Swedish Armed Forces.
